Porterhouse Steak With Hoisin Barbecue Sauce

INGREDIENTS

2 1/2 lb Porterhouse steak
6 T Hoisin sauce
2 T Rice wine vinegar
2 T Soy sauce
2 T Unsalted butter
1/2 Red onion, finely diced
1 Garlic clove, minced
6 Plum tomatoes, coarsely
diced
1/4 c Ketchup
2 T Dijon mustard
2 T Dark brown sugar
1 T Honey
1 t Cayenne
1 T Ancho chile powder
1 t Pasilla chile powder
1 T Worcestershire
Salt and freshly ground
black pepper to taste

INSTRUCTIONS

Season the steak with salt and pepper. Combine all sauce ingredients.
Grill the porterhouse for 5 minutes on each side while basting with
the sauce. Serve with grilled scallions and cast iron potato salad.
