Porterhouse Steak with Hoisin Barbecue Sauce

INGREDIENTS

2 1/2 lb Porterhouse steak
6 tb Hoisin sauce
2 tb Rice wine vinegar
2 tb Soy sauce
2 tb Unsalted butter
1/2 md Red onion,; finely diced
1 Garlic clove,; minced
6 Plum tomatoes,; coarsely diced
1/4 c Ketchup
2 tb Dijon mustard
2 tb Dark brown sugar
1 tb Honey
1 ts Cayenne
1 tb Ancho chile powder
1 ts Pasilla chile powder
1 tb Worcestershire
Salt and freshly ground black pepper to taste

INSTRUCTIONS

SAUCE
Season the steak with salt and pepper. Combine all sauce ingredients.
Grill the porterhouse for 5 minutes on each side while basting with the
sauce. Serve with grilled scallions and cast iron potato salad.
