Potato Patties

INGREDIENTS
| 2 | c | Potatoes, seasoned & mashed |
| 1 | Egg, slightly beaten | |
| 1 | tb | Onion, finely chopped |
| 1 | tb | Green pepper, chopped |
| 2 | tb | Oil |
INSTRUCTIONS
Combine all ingredients except oil; mix well. Shape into six patties. Brown well in hot oil, about 4 minutes on each side. I use leftover mashed potatoes myself. Randy Rigg
