Praline Basket With Pureed Fruit And Mint Cream

INGREDIENTS

110 g Caster sugar
50 g Pastachio nuts
200 g Frozen blackforest fruits
defrosted
6 T Whipped cream
1 T Chopped fresh mint
1 Dsp runny honey

INSTRUCTIONS

Melt the sugar in a pan to form caramel. Stir in the nuts and place  on
a non-stick sheet to cool slightly.  2 Blend the fruits. Add the mint
and honey to the cream. Whilst the  praline in still pliable, move onto
the underside of a greased bowl  and allow to cool forming a bowl.  3
To serve, pile the cream and the fruit puree into the basket,  finish
