Prawns On Lemon Grass Skewers

INGREDIENTS

300 g Minced prawns
1 T Minced garlic paste
1 t Coriander root, finely
chopped
1 t Fish sauce
1 t Lime leaf, finely chopped
1/2 t Sugar
Trimmed lemon grass stalks
6 T Rice vinegar
4 T Sugar
1/2 t Salt
1 Garlic clove, very finely
2 Red chillies, seeded and
finely
1 t Coriander leaves, finely

INSTRUCTIONS

First make the sauce, boil the sugar and vinegar to a syrup then add
the garlic, chillies and salt off the heat. Allow to cool. When cool
add the coriander.  Mix all the prawn ingredients but the lemongrass
together. Mould  around lemongrass sticks and grill on all sides until
