INGREDIENTS

1 c Shelled new peas; (1 pound) ( I have used frozen)
1/3 c Finely sliced green onions; including tender tops
1 c Water
1 c Raw potatoes; cut in 1/4-inch cubes
1 ts Salt
2 tb Butter
1 tb Flour
1 1/2 c Milk
1/4 c Quartered; thinly sliced radishes
1 tb Chopped parsley

INSTRUCTIONS

Cook peas and onions in water uncovered for 10 minutes. Add potatoes and
salt. Continue cooking 6 to 8 minutes. Blend butter and flour over low
heat, add milk slowly, stirring constantly. Combine with peas, potatoes and
their liquid. SIMMER 10 minutes, stirring occasionally. Add radishes and
parsley just before serving. 4 servings
