Prune-Apricot Compote

INGREDIENTS

2 c Pitted prunes
1 c Dried apricots
5 c Water
1/3 c Frozen unsweetened apple juice concentrate
2 Sticks orange zest -or-
1/2 Orange sliced; quartered
1/2 Lemon
2 tb Brandy (optional)

INSTRUCTIONS

Mix all ingredients in a 3-quart glass casserole. Cover and microwave on
high for 15 minutes or until prunes and apricots are plumped and soft.
Cover and refrigerate to chill before serving.
