Prunes In Red Wine

INGREDIENTS

2 c Dry red wine such as
zinfandel
2 T Honey
6 c Pitted dried prunes
1 Whole Vanilla bean

INSTRUCTIONS

Combine wine and honey in large saucepan. Bring to a boil over
medium-high heat. Lower heat to medium. Add prunes; simmer, covered,
20 minutes. Spoon into heat-proof container. Add vanilla bean. Cover
and refrigerate overnight. Reheat or serve chilled. Remove vanilla
bean before serving. Yield: 12 servings.  Comments: This is elegant
