Red-Simmered Duck with Pineapple

INGREDIENTS

1 Duck; 3 to 4 pounds
Water to cover
1 cn (#2) sliced pineapple
2 tb Soy sauce
1 ts Salt
1 ds Pepper

INSTRUCTIONS

1. Wipe duck inside and out with a damp cloth. Place breast-side up in a
heavy pan. Add cold water to cover and bring to a boil; then simmer,
covered, 1 hour.
2. Drain liquid from pineapple and add to duck, along with soy sauce, salt
and pepper. Simmer, covered, 30 minutes more. Add pineapple slices during
last
10    minutes of cooking.
