INGREDIENTS

1 4-lb chicken
4 c Water
1 c Fresh mushrooms
1 c Bamboo shoots
6 Water chestnuts
2 T Soy sauce
1/2 t Salt
1 ds Pepper

INSTRUCTIONS

Wipe chicken with a damp cloth; then, with a cleaver, chop, bones and
all, in 2-inch sections. Place in a heavy saucepan. Boil water and
pour over chicken. Bring to a boil again; then simmer, covered, 30
minutes. Meanwhile slice mushrooms, bamboo shoots and water  chestnuts.
Add to chicken, along with soy sauce, salt and pepper; and  simmer,
