INGREDIENTS

1 cn Spam luncheon meat – (12 oz); cut into 1/2" strips
1 Red bell pepper; cut into 1/2" strips
1 Green bell pepper; cut into 1/2" strips
2 c Fresh corn kernels or thawed frozen corn
1/2 c Oil
3 tb Chi-Chi's hot salsa
1 tb Vinegar
2 c Cooked rice

INSTRUCTIONS

In skillet over medium-high heat, cook Spam and bell peppers 7 to 10
minutes or until browned. Add corn. Cover. Cook 5 to 7 minutes longer or
until corn is tender.
Meanwhile, in small bowl, whisk together oil, salsa, and vinegar. Serve
warm Spam mixture on rice. Drizzle with salsa mixture.
