Roast Beef Steak Sandwich

INGREDIENTS

4 Plain paninis
4 tb Sour cream
4 tb Saut.ed soft onions
4 Tomatoes; (optional – use oven
; dried tomatoes)
325 g Sirloin steak with fat trimmed off
100 g Rocket leaves
4 tb Apple and cranberry chutney
1 Lemon
50 ml Extra virgin olive oil

INSTRUCTIONS

STEAK SANDWICH
DRESSING
Cook the steak to your liking and grill the panini.
To assemble the sandwiches, smear the insides of the panini with sour cream
and then place the tomatoes on the base.
Slice the steak and place over the top of the tomatoes, then add dollops of
apple and cranberry chutney, then the onions.
Dress the rocket with lemon and olive oil dressing and place on top. Serve.
Dressing:
Squeeze the juice of one lemon into a stainless steel bowl. Add the olive
oil and whisk. Season with salt and pepper if desired.
