When His people are without strength, without resources, without hope, without human gimmicks – then He loves to stretch forth His hand from heaven. Roasted Free Range Chicken with Macaroni Gratino

INGREDIENTS

1 Whole free range chicken weighing 2-3 pounds
Salt
Pepper
1 bn Fresh thyme
3 oz Baguette
Butcher string
3 oz Olive oil

INSTRUCTIONS

Remove wings from chicken and stuff chicken with salt, pepper, thyme and
baguette. Use
butcher string to tie. Heat olive oil in a 12-14-inch saucepan. Place
chicken breast side down and cook until golden brown. Turn chicken on its
back and place in a 375 degree oven for 30-40 minutes or until juices run
clear. Remove and rest 10 minutes and carve chicken. Serve with macaroni
gratin.
Yield: 2 servings
