Roasted Sweet Potatoes With Garlic And Lime

INGREDIENTS

2 Sweet potatoes, peeled and
cut into 1" cubes
1 T Olive oil
1/2 t Salt
1/4 t Black pepper
2 Cloves garlic, finely minced
4 Wedges fresh lime

INSTRUCTIONS

Clarion Ledger Recipes, 11/19/97  Heat oven to 375*. Place sweet potato
chunks onto a baking sheet and  toss with olive oil. Sprinkle with
salt, pepper and garlic and toss  to coat. Spread out in one layer on
baking sheet. Roast 30-35 min,  turning once with spatula, or until
potatoes are cooked through and  begin to brown. Just before serving,
squeeze each serving with fresh  lime juice. Makes 4 servings. NOTE: If
you want to add some bite, add  crushed red peppers.  Posted to EAT-L
