Roman Artichokes

INGREDIENTS

12 Baby artichokes
1 Lemon
2 md Onion; coarsely chopped
1 Clove garlic; chopped
1/2 ts Dried basil
1/2 ts Dried marjoram
1/4 c Olive oil
1 c Chicken broth

INSTRUCTIONS

Trim articholes. Halve & let stand in cold water with the juice of the
lemon for 10 minutes. Drain well. Saute the artichokes & onion gently with
oil until golden. Add the garlic, herbs & broth. Cover & bring to a boil
over high heat. Reduce heat to low & simmer gently, covered, for 15 minutes
or until tender. Salt & pepper to taste
Per serving: 340 Calories; 15g Fat (35% calories from fat); 16g Protein;
47g Carbohydrate; 1mg Cholesterol; 1028mg Sodium
