Ruthie’s Mushroom Loaf

INGREDIENTS

1/2 c Chopped onion
1 cn (8 oz) mushrooms, drained*
1 c Grated Choplets**
1 c Shredded raw potato, include skin
3/4 c Evaporated skim milk
3 Eggs, beaten ( use egg substitute )
1/2 ts Sage
1 pn Thyme
2 1/2 tb McKay's "Chicken" seasoning***
3 tb Margarine****

INSTRUCTIONS

* ( this is really good if you use fresh mushrooms sauteed in a little
water+soy sauce--Portabello! )
** ( this a kind of gluten "steak" sold in a can. You can find them in
Shop'n Save or perhaps a natural food store. Brand name Worthington, but
any kind would do, or you could use some Morningstar Farms' burger products
or even a cup of browned low fat beef, or turkey. )
*** (may use same amount boullion. If using salt free may want to add salt
to taste )
**** (use low or ff or just saute' with water, and add a bit of olive oil.
)
Saute' onions and mushrooms if using fresh whichever way you choose, adding
the mushrooms when the onions are mostly done. If using canned mushrooms
just add them when the onions are done and saute' a bit. Mix well with
other ingredients in a bowl. Bake in a sprayed loaf pan at 350 for 1 hour,
or until "set" This is good for a light meal with a hearty salad and bread,
and the leftovers are good for breakfast warmed in the microwave!
