Salad Of Cod, Green Beans, Onions And Cherry Tomatoes

INGREDIENTS

3 1/2 oz Cod fillet, broiled
10 oz Green beans, prepared
2 T Minced red onion
8 sliced
DRESSING
1 T Fresh lime juice
1 T Raspberry vinegar
1 T Extra virgin olive oil
1 t Cilantro, finely chopped
1 t Jalapeno, minced
Salt and pepper
2 T Toasted wheat germ, for
Topping

INSTRUCTIONS

Combine chunks of a broiled cod fillet with steamed green beans, cut
in 1-inch lengths, some minced red onion, and a few sliced cherry
tomatoes.  Toss the salad gently with a zesty dressing made from a
tablespoon  each of lime juice, raspberry vinegar and olive oil. Season
to taste  with cilantro, jalapenos, salt and pepper.  Add healthy
calories from a carbohydrate, like wheat germ, and enjoy.  Posted to
