Salmon Croquettes #3

Seafood, Eggs Seafood 4 Servings

INGREDIENTS

1 cn (1-lb) salmon; drained
1/2 ts Salt
1 ds Cayenne pepper
1 tb Chopped parsley
1/4 c Cracker crumbs
1/2 ts Grated onion
1 Egg; beaten
1 c Bread crumbs
1 Egg; beaten

INSTRUCTIONS

Finely mince fish. Add salt, pepper, parsley, cracker crumhs, onion and
egg. Mix well. Roll in cones. Dip these into beaten egg, roll in bread
crumbs. Drop into deep hot fat and fry until light brown. Drain on paper
towels. Serve immediately with your favorite tartar sauce. Yield: 4
servings.
