Salmon Tarragon

INGREDIENTS

4 Salmon steaks
2 c Water
1/4 c White wine vinegar
1/2 ts Dried tarragon
1 tb Minced parsley
4 Peppercorns
1 tb Minced onion
Lemon slices (for garnish)
Dairy sour cream (optional)
Minced fresh parsley
(optional)

INSTRUCTIONS

Place salmon in large skillet: add wine, wine vinegar, tarragon,
minced parsley, peppercorns & onion. Simmer 15 minutes, uncovered
part of the time, until fish flakes easily with a fork. Carefully
lift out salmon & place on platter; garnish with lemon slices. Serve
hot or cold, plain or with dairy sour cream spiked with minced fresh
parsley.
