Salsa Dressing (European-Style)

INGREDIENTS

2 Red onions; finely chopped
2 Green peppers; seeded and diced
2 Green chillies; seeded and finely diced
1 cl Garlic; finely chopped
1 tb Olive oil
8 Plum or salad tomatoes; skinned, seeded and diced
1 Limes; juice of, up to 2
Salt

INSTRUCTIONS

Mix together the onions, green peppers, chiles, and garlic. Add the oil and
juice of 1 lime. Add the tomatoes and stir well to slightly break down the
tomato flesh. Adjust the seasoning with a good pinch of salt. The salsa
should have a good balance of flavours. More lime juice may be needed to
lift the other tastes. The salsa can be kept in the fridge for a few days.
