Sausage and Potato Frittata, Lhj

INGREDIENTS

8 oz Chorizo or hot Italian sausage
24 oz Frozen potatoes O'Brien
8 lg Eggs
3/4 ts Salt
1/4 ts Freshly ground pepper

INSTRUCTIONS

1. Chop sausage (if using Italian sausage, remove from casing). Cook in a
12-inch nonstick skillet over medium-high heat, 4 to 6 minutes. Transfer
with slotted spoon to a bowl.
2. Add potatoes to drippings in the skillet; cook 15 to 20 minutes, turning
occasionally, until brown. Whisk eggs, 1/4 cup water, salt and pepper in
bowl. Reduce heat to medium; sprinkle sausage over potatoes. Pour eggs over
sausage; cook 5 minutes .
3. Heat broiler. Cover skillet handle with foil. Broil frittata 5 inches
from heat source 3 minutes, until just cooked through.
Prep time: 5 minutes Cooking time: 27 to 34 minutes

NOTES : Savory potatoes O'Brien, diced with chopped onion and bell pepper,
get an extra boost of flavor cooked up with hot and spicy sausage. Choose
Mexican chorizo or hot Italian links.
