Sausage and Rice Brunch Bake

INGREDIENTS

1 lb Pork sausage
3 c Hot cooked rice
2 c (8oz) sharp cheddar cheese,
Shredded & divided
1 Can cream of mushroom soup
1 Can (4 oz) sliced mushrooms-
Drained
1/2 c Milk
3 Eggs, lightly beaten
2 ts Creole mustard
1/4 ts Onion powder

INSTRUCTIONS

Cook sausage in medium skillet over medium-high heat until well done; stir
to crumble.  Drain.  Combine rice and 1 1/2 cups of the cheese in medium
bowl. Spread evenly in buttered 12x8 inch baking dish. Sprinkle sausage
over rice mixture.  Combine remaining ingredients, except cheese, in small
bowl.  Pour over sausage. Sprinkle remaining 1/2 cup cheese over-top. Bake
at 350F 40 to 45 minutes or until set. Source: Favorite Recipes ch.
