INGREDIENTS

1 tb Olive oil
1 454 gram pac Butchers Choice pork sausages
75 g Button mushrooms; sliced (3oz)
2 Tomatoes; chopped
6 md Size eggs
Salt and freshly ground black pepper
1 tb Freshly chopped chives

INSTRUCTIONS

Preheat the oven to 180 C, 350 F, Gas Mark 4.
Lightly brush 6 ramekin or other individual ovenproof dishes with oil.
Grill the sausages following instructions on the pack and slice each
sausage into 6, divide between the ramekin dishes.
Fry the mushrooms in the remaining oil for 3-4 minutes and add to the
ramekins with the chopped tomatoes.
Crack an egg on top of each and add seasoning to taste.
Place on a baking tray in the centre of the preheated oven for
approximately 15-20 minutes until the egg is just cooked.
Notes Serve immediately sprinkled with freshly chopped chives.
