Sauteed Plantains and Sweet Potatoes

INGREDIENTS

2 tb Butter or margarine
2 tb Cooking oil
2 c Sliced cooked sweet potatoes or yams
2 Plantains, peeled & chopped
1/2 c Chopped green onion
1/2 c Chopped cooked ham (opt)
1 Garlic clove, minced
1/2 c Chicken or beef broth
2 tb Butter or margarine
2 tb Chopped fresh thyme, dill, chervil, or savory
Salt to taste
Pepper to taste

INSTRUCTIONS

In a large skillet, melt the first 2 tablespoons of butter and cooking oil
until hot. Add potatoes, plantains, onion, ham, if desired, and garlic.
Cook stirring frequently, about 5 minutes. Add broth. Cover and simmer 10
minutes or until plantains are tender. Add remaining butter and desired
fresh herbs. Season, to taste, with salt and pepper.
