INGREDIENTS

1/2 c Onion — chopped
2 tb Nonfat sour cream
1/2 c Zucchini — chopped
3 Egg whites
1 oz Cooked lean ham — chopped
3/4 c Buttermilk baking mix
2 1/4 oz Shredded cheddar cheese freshly ground black
Pepper
1 c Skim milk

INSTRUCTIONS

1.  Preheat oven to 350F.  Spray 9-inch glass pie plate with nonstick
cooking spray; set aside. 2. Spray small nonstick skillet with non-stick
cooking spray; add onion, zucchini, and ham. Cover over medium heat until
onion is translucent, about 2 minutes. 3. Spread onin mixture over bottom
of pie plate; sprinkle cheese over top. 4. In small bowl, combine milk,
sour cream, egg whites, baking mix and pepper until blended. Pour into pie
plate. Bake until golen brown and puffy, 35 to 40 minutes. Each serving
provides:  1/4 milk; 1 1/4 proteins; 1/2 vegetable; 1 bread; 25 optional
calories.  Per serving:  213 calories, 13 g protein, 9 g fat, 20 g
carbohydrate, 239 mg calcium, 525 mg sodium, 22 mg cholesterol, 1 g dietary
