INSTRUCTIONS
Cook potatoes in small amount boiling salted water until tender; drain.
Mash potatoes well; mix in Spam, parsley, garlic, 1 tablespoon cheese,
pepper, and egg yolk.
Spread mixture in lightly-greased 1-quart baking dish. Sprinkle with
remaining cheese. Bake in 425 degree oven 15 minutes. Place under broiler
to brown, if desired.
