Scallops And Snow Peas

INGREDIENTS

2 T BUTTER
1/2 lb Sea scallops
1 t Grated gingerroot
1 T Fresh lemon juice
1 Red jalapeno pepper
1/2 t Balsamic vinegar
Seeded and minced
1 T Minced scallion
4 oz Trimmed snow peas, about
Salt to taste
1 1/2 Cups
Fresh ground pepper to
Taste

INSTRUCTIONS

Heat butter in large skillet.Add gingerroot and jalapeno pepper and
saute over medium heat 1 to 2 minutes.Do not allow to burn.Add snow
peas and saute until they glisten,2 to 3 minutes... Add scallops and
saute over medium high heat until cooked through,turning over once,5
to 7 minutes.Add lemon juice,vinegar and scallion.Season with salt  and
pepper.Cook over high heat until mixture is hot and flavors
blend,about 1 minute.Makes 2 servings....  Recipe By     :  From:
