INGREDIENTS

12 Shucked scallops, small or
singing
1 Shallot, minced
1 t Minced ginger
1/4 c Fresh lime juice
1 T Wasabi tobiko

INSTRUCTIONS

Mix all together and spoon on top of scallops. Garnish with a little
more wasabi tobiko. Plate on crushed ice or rock salt. This recipe
yields 4 servings.  Suggested Wine: Don Miguel Gascon, Viogniez,
