Scallops With Basil-lemon Sauce

INGREDIENTS

4 T I Can't Believe It's Not
Butter!
1 Garlic clove, minced
1 1/2 lb Bay or sea scallops, rinsed
well dried
3 T Fresh basil leaves, chopped
2 T Fresh lemon juice
Salt and freshly ground
pepper to taste

INSTRUCTIONS

In large, heavy skillet, over medium heat, melt I Can't Believe It's
Not Butter! Add garlic and cook until softened. Do not brown. Add
scallops and basil and saut over medium-high heat, stirring
constantly, for 2 minutes. Add lemon juice and continue cooking,
stirring constantly, 2 to 3 minutes longer. Season with salt and
pepper. Serve immediately. Yield: 4 servings. Posted to MC-Recipe
