Scallops With Chilli And Lime Sauce

INGREDIENTS
185 | g | Green beans, chopped |
185 | g | Snow peas |
1/4 | c | Dry white wine |
500 | g | Scallops |
3 | T | Olive oil |
2 | T | Lime juice |
2 | T | Red wine vinegar |
1 | T | Fresh dill, finely chopped |
1 | t | Chilli paste |
Freshly ground black pepper | ||

INSTRUCTIONS
Steam or microwave beans and snow peas until just tender. Drain. Refresh under cold running water. Drain again and set aside. Place wine and scallops in a saucepan. Cook for 3 minutes or until scallops just turn opaque. Using a slotted spoon, remove scallops and set aside. To make sauce, place oil, lime juice, vinegar, dill, chilli paste and black pepper to taste in a screw top jar. Shake well to combine.
