Scallops With Snow Peas

INGREDIENTS

3 T Safflower oil
2 Garlic cloves, crushed
1/3 lb Scallops
sliced into 1/4" rounds
3 c Snow peas
1/2 t White pepper
1 T Light miso
1 T Arrowroot
dissolved in…
1/4 c Water
1 mg., Cholesterol: 10 mg.

INSTRUCTIONS

Stir-fry garlic in safflower oil until it begins to color; add
scallops and stir-fry 1-2 minutes. Remove scallops and garlic. Add
snow peas to oil and stir-fry 2-3 minutes. Add pepper, miso, and
arrowroot. Stir-fry an additional 2 minutes, then return scallops and
garlic to pan and heat through. Serve.  Nutritional information per
serving: Protein: 8 grams (24%);  Carbohydrates: 9 grams (26%); Fat: 7
