Scrambled Eggs W/fresh Oysters and Chiles

INGREDIENTS

1/4 c Flour
1 ts Salt
1 ts White/black pepper
1 c Shucked oysters (10-12)
3 tb Olive oil
1 tb Sesame oil
1 tb Minced ginger
1/4 c Chopped scallions (white and green parts)
1 tb Chile (I used Serranoes; may want to use more)
2 tb Soy sauce
4 lg Eggs; lightly beaten
Salt and pepper to taste

just had the best breakfast I've had in awhile and thought I'd share it
with you... er the recipe anyways. ;>
It is from 'Big Flavors of the Hot Sun'. I forget the authors and can't
look it up since I sent it to my sister for her b-day.
Serves 4 as an appetizer
Dredge oysters in first three ingrediants and fry in oil. Fry for 2-3
minutes or until lightly browned. Set aside. Cook ginger, scallions and
chile in the oil for 1 minute. Add soy to egg and scramble with the other
ingrediants. Add dash of Frank's or Tabasco if desired.
Yummmm! Though I think it would have gone better with a nice lager or
pilsn, rather than the coffee I had <shrug>. I halved the above recipe
which worked perfectly for one for breakfast.
