INGREDIENTS

4 oz Fresh sea scallops
1/2 oz Olive oil
1 oz Fresh mushrooms sliced
1 ts Chopped parsley
1 oz White wine
1 tb Tomatoes; peeled and diced
1 tb Red pepper julienne
Chef salt to taste
1 ds Fresh lemon juice

INSTRUCTIONS

Heat skillet. Add olive oil, sea scallops and mushrooms and saute. Add
chopped parsley, tomatoes, red pepper, and lemon juice. Season with Chef
salt and serve.
Yield: 1 single entree
