Seared Lamb Chops with Rocket And Parmesan

INGREDIENTS

2 Lamb chops
2 tb Olive oil
2 Red onions; sliced
1 40 g pack rocket
50 g Parmesan cheese; shaved (2oz)
3 tb Flat leaf parsley; roughly chopped
3 tb Balsamic vinegar

INSTRUCTIONS

Cook the lamb chops according to pack instructions.
Heat one tablespoon of the olive oil in a frying pan over a medium heat.
Add the onions and cook for 5 minutes until well-browned and set aside.
Mix together the fried onions with the rocket, parmesan, parsley, balsamic
vinegar and rest of the olive oil.
To serve:Place the lamb chops on a serving plate and top with the rocket
and parmesan mix.
