"second Time Around" Couscous Salad

INGREDIENTS

1 c Cooked couscous
1 Scallion, thinly sliced
1 Rib celery, finely diced
1 c Smoked or regular cooked
chicken cut into
bitesize
1 c Thawed frozen peas
1 oz Blue cheese
1/3 c Mayonnaise
1 t Dijon mustard
Rice vinegar to taste
Chopped fresh parsley

INSTRUCTIONS

In a mixing bowl combine the couscous, scallion, celery, chicken and
peas.  In another mixing bowl combine blue cheese, mayonnaise, mustard
and  rice vinegar to taste; season with salt and pepper.  Yield: 2
