Seitan And Onions Over Mashed Potatoes

INGREDIENTS

5 Potatoes, peeled and chopped
5 c Water
1 Onion, peeled and finely
chopped
2 t Oil
Salt and pepper to taste
1 8 ounce of seitan drained
and chopped into
bite-size
pieces

INSTRUCTIONS

"This is an excellent alternative to onions with beef."  Place potatoes
and water in a large pot ans simmer over medium heat  until potatoes
are tender (about 30 minutes). Drain and mash  potatoes. While potatoes
are cooking, saute onion in oil for 2  minlutes. Add seitan and
seasonings. Stir-fry 5 minutes longer. Serve  seitan and onions over
