Sesame Spinach With Mushrooms

INGREDIENTS

1 T Sesame seeds
3 T Vegetable oil
2 Cloves garlic, minced
1/2 t Salt
Pinch pepper
1 10 oz. fresh spinach
trimmed
1 1/2 c Thinly sliced mushrooms
4 ounces

INSTRUCTIONS

In wok or large skillet, toast sesame seeds over medium heat for 3 to
5 minutes or until golden brown.  Set aside.  Add 2 tbsp. of the oil to
wok; heat over high heat.  Stir-fry garlic,  salt and pepper for about
10 seconds or until fragrant.  Add spinach;  stir-fry for about 2
minutes or just until wilted.  Remove to sieve.  Drain well, gently
pressing out moisture; keep warm.  Drain and wipe wok dry; heat
remaining oil.  Stir-fry mushrooms for  about 1 minute or just until
limp.  Add sesame seeds; remove from  heat.  Place spinach in warmed
serving bowl; sprinkle with mushroom mixture.  Makes 4 servings.  Typed
