INGREDIENTS

2 tb Olive oil; plus 2 teaspoons
1 tb White wine; plus 1 teaspoon
7 Garlic cloves; minced
2/3 c Fresh spinach leaves; stems removed, torn into small pieces
11 oz Cooked shell pasta

INSTRUCTIONS

In a heavy skillet, heat the oil and wine. Add the garlic and saut. for 5
minutes. Add the spinach and saut. just until it wilts. Toss the garlic
spinach sauce with the hot shells and serve.
Per serving: calories 207, fat 9.6g, 42% calories from fat, cholesterol
0mg, protein 5.0g, carbohydrates 25.0g, fiber 2.0g, sodium 23mg.
Exchanges: 1 1/2 Monounsaturated Fat, 2 1/2 Starch.
The recommended wines are: Fum. Blanc, Beaujolais, or Chenin Blanc.
