Shepherd’s Pie Supreme

INGREDIENTS

2 tb Olive Oil
1 lg Onion, finely chopped
1 lb Roast Beef minced, or any good ground beef
1 c Beef gravy, or use a stock cube and water
2 tb Worcestershire sauce
2 tb Parsley chopped
1 tb Chopped fresh herbs or 1/2 ts dried
Salt and ground black pepper to taste
1 1/2 lb Freshly cooked mashed potatoes
6 tb Cream
1 Egg, lightly beaten
2 oz Butter, melted
Grated Parmesan cheese

INSTRUCTIONS

Heat the oil and gently fry the onion until soft.  Mix in the beef, gravy,
Worcestershire sauce and herbs with salt and pepper to taste. Spoon into a
well-buttered deep casserole dish.  Blend the potatoes with cream, egg and
half the melted butter and spread over the meat mixture. Brush with the
remaning butter and sprinkle with grated cheese. Bake in a hot oven
(200C/400F) until the filling is piping hot and the potatoes are golden
brown, about 20 minutes.
