INSTRUCTIONS
1. Peel and shred cucumbers. Sprinkle well with salt. Let stand 1 to 2
hours, then drain.
2. Mince garlic, then combine with soy sauce, peanut oil, sugar and
vinegar, blending well. Add to cucumbers and toss. Serve at once.
VARIATION: For the garlic, substitute 1/4 teaspoon cayenne pepper.
