Simmered Spareribs With Sherry

INGREDIENTS

2 lb Pork spareribs
2 c Water
4 T Soy sauce
1 t Salt
2 T Sherry
1 t Sugar

INSTRUCTIONS

Cut ribs apart; then with a cleaver, chop each, bone and all, in
1-inch sections. Place in a heavy pan with cold water, soy sauce and
salt. Bring to a boil, then simmer, covered, 1 hour. Drain well. Heat
a skillet and add ribs, sherry and sugar. Stir-fry in over high heat
