Simmered Spareribs with Sherry

INGREDIENTS

2 lb Pork spareribs
2 c Water
4 tb Soy sauce
1 ts Salt
2 tb Sherry
1 ts Sugar

INSTRUCTIONS

1. Cut ribs apart; then with a cleaver, chop each, bone and all, in 1-inch
sections.
2. Place in a heavy pan with cold water, soy sauce and salt. Bring to a
boil, then simmer, covered, 1 hour. Drain well.
3. Heat a skillet and add ribs, sherry and sugar. Stir-fry in over high
heat until liquid evaporates. Serve hot.
