Smoked Baked Garlic Chicken

INGREDIENTS

2 Whole chickens
1 c Chopped garlic from a jar
3 tb Brown mustard seeds; crushed
2 Dried tabasco peppers; crushed
2 tb Black pepper
2 tb Nuoc mam
2 tb Worcestershire sauce
1 c Apple cider vinegar
2 tb Paprika
2 c Water
1 tb Quality soy sauce

INSTRUCTIONS

Smoke chickens for 1 hour at 225 degrees.
Mix together jar garlic, mustard seeds, tabasco peppers, black pepper, nuoc
mam, worcestershire sauce, and paprika. Remove chickens from smoker and
place in a covered dutch oven. Spoon mixture into the cavaties of the whole
chickens and baste outsides of the chickens with it also. Add water and
apple cider vinegar. Bake in your range oven, covered, for 1 hour at 325
degrees. Remove cover from dutch oven, raise heat, and bake for an
additional 30 minutes at 350 degrees. Remove from heat and serve.
