INGREDIENTS

1 (10-15 pound) turkey
Kosher salt
Coca-Cola
White wine
Vinegar

INSTRUCTIONS

Rub turkey generously with salt, inside and out. Put in a plastic bag.
Secure and refrigerate for 5 days. Wash thoroughly inside and out to remove
all the salt. Prepare smoker. Be sure and use damp hickory chips on fire.
In drip pan put 1/2 water and 1/2 a mixture of equal parts of coca-cola,
wine and vinegar. Put turkey on rack and baste with the mixture of equal
parts of coke, wine and vinegar. Pour some of the mixture in the cavity of
the turkey. Rebaste every 1 to 2 hours and check the fire. Cook for 8 to 12
hours.
