Smoky Black Bean and Corn Chowder

INGREDIENTS

1/2 c Yellow Onions; Chopped
4 tb Butter Or Margarine; Melted
1/4 c All-Purpose Flour
1/4 ts Black Pepper; Freshly Ground
1 1/4 ts Salt
4 c Milk
17 oz Whole Kernel Corn; Canned, Drained
4 Smoked Sausage Links; Sliced
8 oz Black Beans; Canned, Drained

INSTRUCTIONS

In a saucepan, sauté onion in butter until tender but not brown. Stir in
flour, salt and black pepper. Add milk, and bring to a boil, stirring
constantly until thick and bubbly, about 1 minute. Stir in drained corn,
sausage slices and drained black beans. Reduce the heat and simmer for 10
minutes.
Serving Ideas : With Fresh baked bread
NOTES : Just about any smoked meat can be substituted for the Smoked
Sausage Links.
