INGREDIENTS

4 c Sweet curly Romaine leaves; washed, dried, and
; torn in large pieces
1/2 c Smoky Caesar Dressing; see * Note
Chile Croutons; see * Note
1/4 c Queso Anejo cheese
8 Anchovy fillets

INSTRUCTIONS

* Note: See the "Smoky Caesar Dressing" and "Chile Croutons" recipes which
are included in this collection.
Place the Romaine leaves in a large bowl. Add the Chile Croutons and Queso
Anejo, then drizzle with Smoky Caesar Dressing. Toss lightly to combine.
Serve on salad plates topped with anchovies. This recipe yields 4 servings.
