Smoky Peach Or Apricot Baste

INGREDIENTS

1/2 c Ripe fresh fruit. Smashed
With 3 tbs sugar.
1/4 c Catsup
3 T Lemon juice
2 T Salad oil
1/2 t Salt
1/8 t Grated lemon peel, zest
1/2 t Liquid smoke**

INSTRUCTIONS

If you use peaches for this baste, try a dash of allspice to bring  out
the peach flavor.  Try the baste first on chicken, but you may  also
like it on pork or lamb.  Puree fruits.  Combine with remaining
ingredients.  Simmer 10 to 15  minutes.  Makes about 1 1/2 cups  ** If
you are using this over wood coals, the liquid smoke should not  be
necessary.  If you are using this over Lazy-Q (Gas) then the  addition
of some liquid smoke will improve the flavor  Posted to bbq-digest V5
