Smothered Liver Casserole

INGREDIENTS

1 lb Beef liver; sliced
1/4 c Flour
1/4 c Shortening
3 md Onions; chopped
1/4 c Chopped celery
1 c Canned tomatoes
1 ts Salt
1/8 ts Pepper

INSTRUCTIONS

Roll each piece of liver in flour; brown lightly on both sides in hot
shortening in skillet. Place liver in casserole.
Brown onions lightly; add celery and tomatoes. Simmer until heated through
well. Spoon vegetables over liver; season with salt and pepper.
Cover. Baker at 350-degrees F. for 45 minutes.
Yield: 6 servings
