Snow Peas Tossed With Ginger And Almonds

INGREDIENTS

1 lb Snow peas
2 t Vegetable oil
2 Cloves garlic, chopped
1 T Peeled, chopped fresh
ginger
1 t Chile paste or chile sauce
1 t Honey
2 t Chopped fresh basil plus 4
whole sprigs
Soy sauce
1/2 c Almonds, toasted and chopped
Pickled ginger

INSTRUCTIONS

Pinch off the stem ends of the snow peas and remove strings, if any.
Heat the oil in a wok or high-sided large saute pan over high heat
until very hot. Add the garlic and ginger and saute over high heat
until fragrant.  Add the snow peas and toss, stir-frying for about 2
minutes. Add the  chile paste, honey, and the 2 teaspoons of basil and
cook until the  snow peas are crisp-tender, 1 to 2 minutes. Season to
taste with the  soy sauce, add the almonds, and toss well.  To serve,
transfer the snow peas to a serving platter. Garnish with  the basil
sprigs and pickled ginger, and serve immediately.  Converted by
