INGREDIENTS

1 1/2 lb Fillet of sole
5 T Olive oil
1 c Tomato juice
3/4 c Bread crumbs
1 T Oregano
2 Sprigs parsley, minced
Salt & pepper
1/2 Lemon, Juice of

INSTRUCTIONS

Clean and wash fish. Grease a baking dish with oil and lay fillets in
the bottom of a dish. Pour liquid around them. Combine remaining
ingredients except lemon juice, and sprinkle over fish. Bake in a
moderate oven (350F) until fish flakes easily, about 15 minutes. Do
not overcook. Sprinkle fillets with lemon juice and serve immediately.
